Roast duck anyone?


China is famous for its roast duck. Most people don't have the space or equipment to prepare a roast duck so they buy it at the market. Sometimes, they buy it at an open air market. In fact, quite often, they buy it in an open air market!

This photo shows ducks lined up in a row. Right behind the ducks, you can see three large vats. These vats are filled with boiling oil. When you choose your duck (they all look the same to me!), the seller will then place it in the oil and cook it. Yup, that's right! Roast duck is actually FRIED duck! The skin gets very crispy and the meat remains quite tender. (I believe the word "roast" is used more for western preferences as the Chinese word for the dish is "fried" duck!)

Roast duck is served with a plum sauce, with slivers of onion and wrapped in a very thin tortilla type bread. 好吃吗? Does that sound good to you? Absolutely!

Yuck to the hanging for view (I know, I know, it's how it's done), but yum to the cooking and eating!
